パンプキン（カボチャ）はウリ科の一年草または多年草（蔓植物）です。この科はメロン、スイカ、キュウリ、スクワッシュ、ユウガオ、ヘチマ、パティパンなど、素晴らしく美味しくて健康的なメンバーを含む、親しみやすく大きな家族です。
ほとんどのカボチャの種は、アフリカ、アジア、アメリカの熱帯および亜熱帯地域に由来します。カボチャは何千年も前に人類によって発見され、現在でもその人気は衰えていません。最も大きな果実の一つであるだけでなく、最も健康的な果実の一つでもあります！ 黄金色のカボチャを見ていると、太陽のエネルギーと強さをすべて吸収し、それを分け与えてくれるかのように感じます。
オレンジ色の品種は、ニンジンよりも多くのベータカロテン（プロビタミンA）を含んでいます。鉄分、銅、亜鉛、カルシウム、カリウム、ビタミンE、B、C、フッ素の優れた供給源です。カボチャの種は子供たちの大好物です！ カボチャの種には健康上の利点も多く、タンパク質、亜鉛、その他のビタミンの優れた供給源であり、コレステロールを下げるとも言われています。また、マグネシウム、マンガン、リン、フィトステロールの供給源でもあります。サラダにトッピングしたり、生や軽くローストして楽しんだりできます。
パンプキンシードオイルは脂肪酸を含み、ローストしたカボチャの種から作られる濃厚な緑褐色のオイルです。料理やサラダドレッシングとして使用される際、その力強い風味のため、通常は他のオイルと混ぜて使われます。中欧や東欧で料理に使われており、オーストリアでは珍味とされ、伝統的な地元のカボチャスープやポテトサラダに少量を加えることがよくあります。カボチャの花は実は食用で、サラダに加える素晴らしい珍味となります。受粉した雌花は実をつけるため、雄花を使用するのが好ましいです。
セイヨウカボチャ（Cucurbita maxima）とペポカボチャ（Cucurbita pepo）は、世界中の農業で最も人気のある品種です。秋の食卓やダイエットをどのように彩ることができるでしょうか？ カボチャはスープ、サラダ、ケーキ、パン、パイ、お粥への追加、アイスクリームなどに使用できます。そう、パンプキンビールも忘れてはいけません！ 昨日、季節限定の風味豊かなパンプキンエールとパンプキンウィートビールを買いました。うーん、美味しい……。
キッチンでは、調理方法が最終的な結果（味と香り）に影響を与えます。蒸したり煮込んだりすると、香りが際立ちにくいため、あまり良いアイデアではないかもしれません。オーブンで焼くことで、カボチャ独特の香りが引き立ちます。また、ショウガ、ナツメグ、クローブ、シナモンなどのスパイスともよく合います。
そして今、レシピのご紹介：
焼きカボチャ： 皮と種を取り除きます。立方体に切り、陶器や鋳鉄の平鍋に入れ、砂糖とスパイスを振りかけてオーブンで約20〜40分焼きます。レーズン、ドライアプリコット、ハチミツ、ホイップクリームなど、お好みのものを添えてお召し上がりください。
カボチャのお粥： 鍋に水を入れ、火にかけます。カボチャの角切りを加え、お湯が沸騰するまで待ちます。キビを加え、約30分間煮込みます。かき混ぜるのを忘れないでください！ 甘いお粥が好きな方はスパイスとブラウンシュガー、またはホイップクリーム、ナッツ、ドライクランベリーを加えてください。塩味が好きな方は、醤油と胡椒を加えてください。
最後に！ パンプキンブレッド： 砂糖3カップ、植物油1カップ、オーガニックの放し飼い卵（大）3個、カボチャの角切り1カップ、無漂白小麦粉3カップ、クローブパウダー小さじ1、シナモンパウダー小さじ1、ナツメグ小さじ1、重曹小さじ1、刻んだクルミとレーズンを各1カップ用意します。オーブンを350°F（約175°C）に予熱します。パン型にバターを塗り、粉を振っておきます。大きなボウルで砂糖と油をよく混ぜ合わせます。卵とカボチャを混ぜ入れます。別の大きなボウルに小麦粉、クローブ、シナモン、ナツメグ、重曹をふるい入れます。これをカボチャの混合物に混ぜ、さらにクルミを混ぜます。中央にテスターを刺して何もついてこなくなるまで、約1時間焼きます。数分間冷まします。
